(AJNews) – Honey Cake is the gold standard for a sweet New Year but there is nothing standard about this recipe provided by Gail at the Britannia location of Grumans Deli. This honey cake recipe makes 2 loaves.
Ingredients
3 1/2 C all purpose flour
2 tsp baking powder
1/2 tsp salt
4 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1 C oil
1 C honey
1 1/2 C granulated sugar
3 eggs
1 tsp vanilla
1 C coffee
1/2 C orange juice
1/4 C rye/whiskey
Instructions
Preheat oven to 350 degrees. Prepare 2 loaf pans by spraying with oil spray and lining with parchment.
In a large bowl, whisk together all dry ingredients and set aside. In a separate bowl beat eggs, oil and sugar. Add in vanilla, coffee, orange juice and whiskey and beat until well combined. Create a well in centre of dry ingredients and add wet ingredients, mixing until just incorporated. Do not overmix! Pour into loaf pans and bake for 40-55 min.
